  • 2 lbs Minced Beef
  • 6 Scallions finely chopped including the green sections
  • 2 tablespoon Worcestershire sauce
  • ½ teaspoon Kosher Salt
  • ½ teaspoon Black Pepper
  • ½ teaspoon Crushed Red Pepper
  • 1 teaspoon Garlic Powder or 4 cloves garlic crushed
  • 1 teaspoon Chili Powder
  • 2 Eggs gently beaten
  • 1 cup Breadcrumbs

For the Sauce

  • 1-12 oz Chili Sauce
  • 1-15.5 oz Reduced Sugar Concord Grape Jelly

Directions 

  • Preheat the oven to 350 degrees F.

  • In a large mixing bowl, combine 2 lbs Minced Beef, 6 Scallions, 2 tablespoon Worcestershire sauce, ½ teaspoon Kosher Salt, ½ teaspoon Black Pepper, ½ teaspoon Crushed Red Pepper, 1 teaspoon Garlic Powder, 1 teaspoon Chili Powder, 2 Eggs, and 1 cup Breadcrumbs.   • Thoroughly mix all components, then form into uniformly sized meatballs about the size of golf balls.

  • Cover a large baking sheet with parchment paper and arrange the meatballs in even rows.

  • Bake for 30 minutes or until the internal temperature of the meatballs reaches 165 degrees F.

  • Once the meatballs are out of the oven, you will observe the fat that has accumulated around them. Carefully spoon off the fat before moving them into the sauce.

Homemade Bread Crumbs

  • Toast the bread, rip into fragments, and put in a high-speed blender or food processor. Blend or pulse until you achieve bread crumbs, then transfer the bread crumbs into the meat mixture.
